Honey Glazed Pork Chops

Got some pork chops at the Meating Place in Hillsboro, OR. Saw an episode of “Chopped” on food channel where a chef glazed the meat and I thought I’d try something like that with these pork chops. The Apple Cider and the Honey did give the chops a good taste. Loved it!

Ingredients:

For the marinade:
2.5lb pork chops,
3 Tbsp. brown sugar,
3 tsp. chili powder,
1.5 tsp. ginger garlic paste,
1 tsp. salt,
1.5 tsp. pepper,
1 Tbsp. olive oil,
1.5 tsp. fish sauce.

Mix all well and marinate the chops overnight – preferably.

For the glaze:
1.5 cup apple cider,
1.5 Tbsp. Dijon mustard,
1.5 tsp. crushed red pepper flakes,
1.5 tsp. salt,
1.5 Tbsp. Oyster Sauce,
2 Tbsp. Honey.

For the glaze, put everything in a pot and simmer for ~20-30 minutes. Keep mixing it during this time.

Get your grill going and get it to a temp of 300F. Put the pork chops on the grill and use a BBQ mop to put the glaze on the chops. After 5 minutes flip and put the glaze on the other side. Keep flipping every 5 minutes and adding the glaze. Bring it to the internal temp you’d like (I took it off at 145F, which had a little pink in the middle) and serve.
