Delhi Tikka Masala Simmer Sauce

For all you folks who asked for my recipe for making a simmer sauce with our Delhi Tikka Masala. This is a very versatile simmer sauce and comes out extremely flavorful.

The recipe below will produce roughly 2 cups of the simmer sauce. I usually make it in bulk and then put one cup into ziplock backs and freeze. They make for quick meals by just adding one cup with water and desired veggies or meat and boom, dinner is ready!

This recipe has a kick to it – a mild one though. The flavors of our Delhi Tikka Masala are bold and fire-y.

* 300 grams Onions (3 large onions roughly chopped)
* 600 grams of Tomatoes (4-5 large tomatoes roughly chopped)
* 3 tbsp ghee
* 15 grams (1.5 tbsp) India’s BBQ Delhi Tikka Masala
* 2 tbsp ginger and garlic paste (optional)
* 1 cup of unsweetened yogurt (whipped)
* 1.5 tbsp white vinegar
* 1 tsp sugar.

1. Heat the ghee and put in 1/2 tbsp of Delhi Tikka Masala in the ghee and stir for 15 seconds.
2. Add onions, tomatoes and ginger & garlic paste. Mix well.
3. Let it cook on medium heat for about 20 mins (stir frequently) till the tomatoes have completely disintegrated.
4. Add the yogurt. We’re whipping it beforehand so that they don’t form lumps when put into the onion tomato paste.
5. Continue cooking on medium heat (covered) till the oil bubbles up to the top. Stir frequently.
6. Add the vinegar and stir and cook for an additional 5 minutes.
7. Blend with a hand blender.
8. [Optional] Once the sauce has cooled down – slowly push it through a sieve. This will separate the tomato seeds, skin and leave you with a fine sauce. This is completely optional and I usually skip this step.

I’ll put up a post on how to use this simmer sauce soon.
